Hi, hi! This short week felt extra long. So weird how that happens!
We are back into the full swing of things this week and trying our best to beat the post-vacation blues. We spent a week in NC/SC visiting my husband’s family, and we took Kieran on his first airplane flight. He did great! I have to say, I used to judge parents who would stick their kids in front of a tablet to keep them entertained (definitely one of those stupid pre-real-parenting “I’ll never do that with my kids” things), and now, I am eating my words big time. It totally saved us on both flights! Toddlers (at least my toddler) need constant stimulation/entertainment, and a cramped airplane is not the easiest place to provide such services. So, we downloaded several of his favorite shows and even a couple movies to our iPad and let him zone out as soon as we were settled in our seats. Worked like a charm. Definitely goes into my “don’t talk until you have to walk the walk” column of life.
The trip was fantastic. Kieran got to see his grandparents (Dan’s father and stepmom), whom he only sees a couple times a year, as well as many extended family members. He is such a charmer and loves being the center of attention (send help when he’s a teen), so meeting a ton of new people and having them swoon over him made for some very cute and very hysterical moments. We had a ton of fun.
Now that I’m back to normal (quieter) life, I’m trying to stay on top of these weekly favorites. I skipped last week because of vacation, and as a result, I have some major making up to do this week. Look at all this awesome stuff!
These chimichurri fries with gorgonzola actually made me say “holy shit” out loud…like four times. Yes.
I love a good, simple panzanella and this one looks fantastic.
OMG, I didn’t know salted maple caramel was a thing but I want to put it on everything. Drooling.

This spicy soba miso soup is perfection. I could eat a bowl of soup like that for lunch and dinner for the rest of time and be happy.

Given that avocado toast with eggs is one of my everyday staples, I’m loving this superfood twist with peas!
