Chai-Spiced Apple Cider Floats

Ingredients

For the Chai Spice Mix:

  • 3 tablespoons ground ginger
  • 2 tablespoons ground cinnamon
  • 1 tablespoon ground cardamom
  • 1 tablespoon ground allspice
  • 1 tablespoon ground cloves

For the Spiced Cider:

  • 3 cups apple cider
  • 23 teaspoons of the Chai Spice Mix (to taste)

For the Floats:

  • The spiced cider
  • Ginger beer or seltzer
  • Vanilla ice cream
  • Whipped cream
  • Additional chai spice
  • Cinnamon sticks
  • Spiced rum or bourbon, optional

Instructions

For the Chai Spice Mix:

  1. Mix together the spices in an airtight container. Seal and store in the pantry for several months.

For the Spiced Cider:

  1. Place the apple cider in a medium pot and add in the spices.
  2. Bring to a gentle simmer over medium-low heat, stirring occasionally. Simmer for 5 minutes and then remove the pot from the heat.
  3. Allow the cider to cool to room temperature.
  4. Chill if using later.

For the Floats:

  1. Add 2-3 scoops of ice cream to your serving glasses.
  2. Pour some of the cooled spiced cider over top. If using rum/bourbon, add a splash of that as well.
  3. Top each float off with a little ginger beer or seltzer and gently stir to mix.
  4. Garnish each glass with whipped cream, a sprinkling of the chai spice, and a cinnamon stick. Serve immediately.
