For the Simple Syrup:
- 1 cup sugar
- 1 cup water
For 2 Cocktails:
- Juice of 1 grapefruit
- Juice of 1 lemon
- Juice of 1 lime
- ¼ cup St. Germaine liqeur
- ½ cup gin (I prefer Hendrick’s)
- 2–4 tablespoons of the simple syrup (or to taste)
- Seltzer or sparkling water
- Fresh mint or rosemary sprigs, for garnish (optional)
Instructions
For the Simple Syrup:
- Combine the water and sugar in a small saucepan and bring to a simmer over medium heat. Stirring occasionally, simmer for a few minutes or until the sugar is completely dissolved. Cool to room temperature (or better yet, chill in the fridge) until you are ready to make the cocktails.
For 2 Cocktails:
- To a shaker filled with ice, add the citrus juices, St. Germaine, gin, and simple syrup (start with 2 tablespoons and add more as needed). Shake vigorously for 30 seconds, taste for sweetness, and adjust as necessary.
- Pour the mixture into chilled glasses and top each glass off with some sparkling/seltzer water. Garnish each glass with a sprig of mint or rosemary. Serve immediately!
