For the Burgers:
- ¼ cup finely diced English cucumber
- ¼ cup finely diced onion
- 1 garlic clove, grated or pressed
- 2 teaspoons finely chopped fresh mint
- 2 teaspoons finely chopped fresh dill
- Salt and pepper, to taste
- 1 egg, lightly beaten
- 1 lb ground lamb (or ground chicken)
- Olive oil, for cooking the burgers
For Serving:
- Iceberg or butter lettuce leaves, for wrapping
- Tzatziki (store bought or homemade
- Crumbled feta cheese
- Sliced tomatoes
- Sliced red onions
- Sliced cucumbers
- Additional fresh mint or dill
Instructions
For the Burgers:
- In a mixing bowl, combine the cucumber, onion, garlic, herbs, and a pinch each of salt and pepper. Taste the mixture and adjust the seasonings, as needed (remember, you want this to taste a little saltier than you would normally prefer – the meat needs the extra seasoning).
- Stir in the beaten egg and the ground lamb, being careful not to overwork the meat. Mix until all the ingredients are evenly combined.
- Form the mixture into patties, aiming for 4-6.
- Preheat a large skillet or (grill pan or grill!). Add a drizzle of oil to the skillet once it is hot and add the burger patties to the hot oil. Cook for 4-5 minutes per side.
- Remove from the pan and allow to cool slightly before serving.
To Serve:
- Place each burger on a large lettuce leaf and top with desired condiments. Gently wrap the lettuce around the burger and the fillings and serve!
