For the Buffalo Cheese Sauce:
- 1 tablespoon butter
- 1 tablespoon flour
- 1 cup whole milk
- 1 cup shredded sharp cheddar or Monterey jack cheese
- ⅓ cup buffalo hot sauce
- ¼ cup ranch or blue cheese dressing
- Salt and pepper, to taste
For the Slaw:
- 2 tablespoons mayo
- 2 tablespoons Greek yogurt
- 2 tablespoons red wine vinegar
- 3 teaspoons sugar
- 1 bag coleslaw mix (you can certainly shred your own)
- ½ cup crumbled blue cheese (you can sub with feta if you don’t like blue cheese)
- Salt and pepper, to taste
For Assembly:
- 8 hot dogs
- 8 hot dog buns
- Additional buffalo hot sauce
- Additional crumbled blue cheese
- Fresh herbs, such as parsley or chives
Instructions
For the Buffalo Cheese Sauce:
- Melt the butter in a medium saucepan over medium heat. Once it’s melted and starting to bubble, whisk in the flour.
- Whisk together to create a roux and cook for 1-2 minutes until the mixture turns slightly golden.
- Slowly add the milk, whisking constantly, and stir until the milk thickens.
- Add in the cheese and whisk until melted and smooth.
- Whisk in the hot sauce and dressing and season, to taste, with salt and pepper. Go light on the salt: the other ingredients have quite a bit.
- Keep warm until you are ready to serve.
For the Slaw:
- In a large bowl, whisk together the mayo, yogurt, vinegar, and sugar. Season with a little salt and pepper, to taste.
- Add in the coleslaw mix and toss until everything is evenly coated in the dressing.
- Add the cheese and gently fold it in. Check the seasoning and adjust as necessary.
- Keep chilled until you are ready to serve.
To Assemble:
- Grill your hot dogs to your desired crispiness (I love a well-done dog). Place the cooked hot dogs in the buns.
- Drizzle each hot dog with the buffalo cheese sauce and then top with the slaw.
- Garnish with additional buffalo sauce, blue cheese, or chopped fresh herbs. Serve immediately.
