For the Cereal Treats:
- Nonstick cooking spray
- 4 tablespoons butter
- 1 (10-oz) package mini marshmallows
- 6 tablespoons cashew butter (see NOTE)
- Pinch of fine salt
- 6 cups crispy rice cereal
- ½ cup salted cashews, finely chopped
For the Topping:
- 1½ cups dark chocolate chips
- 2 tablespoons heavy cream
- 1 cup salted cashews, lightly chopped
- Coarse sea salt, for sprinkling on top (optional)
Instructions
For the Cereal Treats:
- Spray a 13 x 9 inch baking dish with nonstick cooking spray and line with parchment paper, letting the parchment paper hang over the edges.
- In a medium saucepan, melt the butter. Add in the marshmallows, cashew butter, and salt and stir until melted and smooth. Fold in the cereal and the chopped cashews and toss to combine. Press the mixture into the prepared baking dish and set aside.
For the Topping:
- Melt the chocolate chips and heavy cream together in a microwave-safe bowl, stirring every 15 seconds until completely melted and smooth. Pour the mixture over the cereal treats and spread out so even. While the chocolate is still warm, top with the chopped cashews and a sprinkling of coarse sea salt. Allow to set until firm. Slice and serve!
NOTE:
- You can make these with any nut butter you like. Almond and peanut butters would work just as well here. Garnish with the same nuts as your butter choice.
