Description
This Lemon Lavender Gin Spritz is a refreshing and fun cocktail filled with whimsy! Gin, lavender, and lemonade are the base of this drink – light and delicious. A float of butterfly pea pollen over top gives this a dramatic and festive flair!
Ingredients

For the Lavender Syrup:
- 1 cup water
- ¾ cup sugar
- 2 tablespoons dried culinary lavender (I buy mine online)
For the Butterfly Pea Pollen Float (OPTIONAL):
- 1 teaspoon butterfly pea pollen powder (I buy mine online)
- 4 oz cold water
For the Cocktails:
- Ice
- 4 oz gin
- 2 oz lavender syrup
- 6 oz lemonade

Sparkling water, for topping off the glasses

Butterfly pea pollen mixture, optional
- Lemon slices, for optional garnish
- Lavender sprigs, for optional garnish
Instructions
For the Lavender Syrup:
- Combine the sugar and water in a small saucepan and set over medium heat. Bring to a boil, and then reduce the heat to a simmer, and cook for 5 minutes or until the sugar is completely dissolved.
- Stir in the dried lavender and remove the pan from the heat. Allow the syrup to cool to room temperature (the lavender will steep in the hot syrup as it cools).
- Strain out the lavender and store cooled syrup in the fridge.
For the Butterfly Pea Pollen Float (OPTIONAL):
Combine the pollen powder and the water in a small measuring cup. Stir until the powder is completely dissolved.
For the Cocktails:
- Fill two glasses with ice.
- To a shaker filled with ice, add the gin, lavender syrup, and lemonade.
- Shake vigorously to combine and chill all the ingredients. Strain into the glasses filled with ice. Top with a splash or two of sparkling water.
- If using the butterfly pea pollen, slowly pour a few teaspoons of the mixture over the top of the glasses for a dramatic and beautiful effect. This part is totally optional.
- Garnish with lemon slices and lavender sprigs and serve immediately.
Notes
- The butterfly pea pollen powder is for visual effect only and is completely optional – it doesn’t add flavor to the drink. Just adds beautiful color and a twist of whimsy!
- If gin is not your favorite, this would be great with any light liquor: vodka, light rum, or tequila. It also works great as a virgin drink!
