Description

These Ginger Beer Margaritas are a spicy, sweet sensation! Featuring homemade ginger syrup, margarita fixin’s, and bubbly ginger beer, these have something for everyone! Ginger lovers will flip for these.

Ingredients

Scale

For the Ginger Syrup:

  • 1 cup sugar
  • 1 cup water
  • 1/3 cup sliced fresh ginger (no need to peel)

For the Margaritas:

  • 2 lime wedges
  • Salt or sugar, for rimming glasses
  • Ice
  • 2 oz freshly squeezed lime juice (roughly 2 limes – I generally plan on 1 lime per margarita)
  • 2 oz triple sec or orange liqueur
  • 3 oz silver tequila
  • 1.5 oz of the ginger syrup
  • Ginger beer, for topping off glasses (roughly 3 oz per margarita)

Instructions

For the Ginger Syrup:

  1. Combine the sugar and water in a small saucepan and set over medium heat.
  2. Bring to a boil and then simmer for a few minutes until the sugar is completely dissolved.
  3. Add in the fresh ginger and remove the pan from the heat. Allow the ginger to steep in the syrup until it has cooled to room temperature. Once it has cooled completely, you can strain out the fresh ginger and discard.
  4. Store in an airtight container in the fridge until you are ready to use.

For the Margaritas:

  1. Run a lime wedge around two glasses and then dip the rims in salt, sugar, or a combination of the two (definitely a preference thing). Fill the glasses with ice.
  2. To a shaker filled with ice, add the lime juice, triple sec, tequila, and ginger syrup. Close the shaker and then shake vigorously for 30 seconds or so to ensure all the ingredients are thoroughly mixed and chilled.
  3. Strain the mixture into the two glasses, and top each glass off with a few ounces of ginger beer. Garnish with additional lime wedges or slices of fresh ginger and serve.
