Description

This Watermelon Cucumber Salad with Hot Honey Vinaigrette is the salad of summer! Sweet, juicy watermelon, crunchy cucumbers, salty feta, and a sweet and tangy hot honey vinaigrette make for one refreshing dish. It’s the perfect medley of flavors, textures, and color, and it works well as a light lunch or a fantastic side!


Ingredients

For the Salad:

  • 6 cups diced watermelon
  • 2 cups sliced English cucumbers
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh basil, lightly chopped or torn
  • 1/4 cup fresh mint leaves

For the Vinaigrette:

  • Zest and juice of 2 limes
  • 2 teaspoons rice wine vinegar
  • 2 tablespoons hot honey
  • 1/4 cup extra-virgin olive oil
  • Salt and pepper, to taste

Instructions

For the Salad:

  1. Combine the watermelon, cucumbers, feta, and herbs in a large serving bowl (alternatively, you can arrange this prettily on a large serving platter).
  2. Reserve some of the feta and herbs for garnish.

For the Vinaigrette:

  1. Whisk together the lime zest, lime juice, vinegar, and hot honey in a bowl.
  2. While whisking, slowly stream in the olive oil and mix until the vinaigrette is well combined.
  3. Season, to taste, with salt and pepper.
  4. Adjust the acid or sweetness to your preference – this yields a very tangy, lime-forward flavor. If you want it sweeter, use less lime juice and more honey. In my opinion, dressings like this should be a “to taste” method!

To Serve:

  1. Drizzle the dressing over the salad and gently toss. Garnish with the reserved feta and fresh herbs.
  2. Serve immediately or chill and serve later. The longer it sits, the more the flavors will meld. The salad will keep in the fridge for up to two days.
