This Watermelon Cucumber Salad with Hot Honey Vinaigrette is the salad of summer! Sweet, juicy watermelon, crunchy cucumbers, salty feta, and a sweet and tangy hot honey vinaigrette make for one refreshing dish. It’s the perfect medley of flavors, textures, and color, and it works well as a light lunch or a fantastic side!

For the Salad:
- 6 cups diced watermelon
- 2 cups sliced English cucumbers
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh basil, lightly chopped or torn
- 1/4 cup fresh mint leaves
For the Vinaigrette:
- Zest and juice of 2 limes
- 2 teaspoons rice wine vinegar
- 2 tablespoons hot honey
- 1/4 cup extra-virgin olive oil
- Salt and pepper, to taste
Instructions
For the Salad:
- Combine the watermelon, cucumbers, feta, and herbs in a large serving bowl (alternatively, you can arrange this prettily on a large serving platter).
- Reserve some of the feta and herbs for garnish.
For the Vinaigrette:
- Whisk together the lime zest, lime juice, vinegar, and hot honey in a bowl.
- While whisking, slowly stream in the olive oil and mix until the vinaigrette is well combined.
- Season, to taste, with salt and pepper.
- Adjust the acid or sweetness to your preference – this yields a very tangy, lime-forward flavor. If you want it sweeter, use less lime juice and more honey. In my opinion, dressings like this should be a “to taste” method!
To Serve:
- Drizzle the dressing over the salad and gently toss. Garnish with the reserved feta and fresh herbs.
- Serve immediately or chill and serve later. The longer it sits, the more the flavors will meld. The salad will keep in the fridge for up to two days.
