Description

This Potato Chip Chicken with Creamy Honey Dijon Sauce is an easy 30-minute meal that the whole family will love! Tender, juicy chicken cutlets crusted in a simple potato chip crust and topped with a dreamy honey dijon sauce! So simple but so delicious.


Ingredients

For the Chicken:

  • 1.5 lb chicken cutlets
  • Garlic salt and pepper
  • 1 tablespoon mayo
  • 1 1/2 cups crushed potato chips (we like plain – but use any flavor you like!)

For the Honey Dijon Sauce:

  • 1/4 cup plain Greek yogurt
  • 1 tablespoon mayo
  • 2 teaspoons Dijon mustard
  • 2 teaspoons honey
  • Salt, to taste
  • Chives, for garnish

Instructions

For the Chicken:

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper (optional – just makes clean up easier).
  2. Place the chicken cutlets in an even layer on the baking sheet and season with garlic salt and pepper.
  3. Spread a thin layer of the mayo on top of each cutlet.
  4. Top the mayo with the crushed potato chips, gently pressing them in so they adhere.
  5. Bake the chicken for 15-20 minutes or until the chicken is cooked through and the potato chip topping is lightly golden.

For the Sauce:

  1. While the chicken is baking, make the sauce by whisking together all the ingredients in a bowl.
  2. If it is very thick, thin with a teaspoon or two of water, whisking well to incorporate. Taste and adjust the seasoning as necessary.

To Serve:

On each serving of chicken, drizzle some of the honey dijon sauce – use as much or as little as you like. Garnish with chopped chives and serve immediately.

Notes

To crush the potato chips, I place a few handfuls in a large resealable plastic bag and use my hands to break them up until I get the size crumb I want. You could also use a food processor if you want a really fine crumb.
