Scale
For the Simple Syrup:
- 1 cup water
- 1 cup sugar
For the Lemonade:
- 1½ cups fresh lemon juice
- 1 cup fresh clementine juice
- Simple syrup, to taste (start with ½ cup and add more as needed)
- 5 cups water
For the Brûléed Citrus:
- Clementines, lemons, grapefruit, or oranges (or any mix of these fruits)
- Coarse turbinado sugar
- Kitchen torch
For Each Cocktail:
- ⅔ cup of the lemonade mixture
- 2 oz vodka
- 1 oz St. Germaine liqueur
- The bruleed citrus, for garnish
- Mint sprigs, for garnish
Instructions
For the Simple Syrup:
- Bring the water and sugar to a boil over medium-high heat in a small saucepan and simmer for 5 minutes, stirring frequently, until the sugar is completely dissolved. Allow to cool completely.
For the Lemonade:
- Combine the lemon juice, clementine juice, simple syrup (to taste), and water in a large pitcher, mixing well to combine. Taste, and adjust the sweetness as necessary. Chill in the fridge for a couple hours.
For the Brûléed Citrus:
- Slice the citrus fruit into ½-inch-thick rounds, leaving the peel in tact. Place the citrus slices on a baking sheet lined with foil and pat them with paper towels to remove extra moisture.
- Sprinkle the turbinado sugar over the citrus rounds evenly. Using a kitchen torch, carefully melt the sugar until it is golden and crusty. Alternatively, broil for a few minutes in the oven. Allow the fruit to cool for a few minutes before handling.
To Make the Cocktail:
- To a shaker filled with ice, add the lemonade, vodka, and St. Germaine and shake vigorously for 30 seconds or so. Pour the mixture into ice-filled glasses and garnish each glass with one or two slices (depending on the size/choice of fruit) of the brûléed citrus rounds and a sprig of mint. Serve immediately.
