Boozy Clementine Lemonade with Brûléed Citrus & Mint


  • Yield: 6-8 servings of the lemonade (cocktail recipe easily multiplied) 1x

Ingredients

For the Simple Syrup:

  • 1 cup water
  • 1 cup sugar

For the Lemonade:

  • 1½ cups fresh lemon juice
  • 1 cup fresh clementine juice
  • Simple syrup, to taste (start with ½ cup and add more as needed)
  • 5 cups water

For the Brûléed Citrus:

  • Clementines, lemons, grapefruit, or oranges (or any mix of these fruits)
  • Coarse turbinado sugar
  • Kitchen torch

For Each Cocktail:

  • ⅔ cup of the lemonade mixture
  • 2 oz vodka
  • 1 oz St. Germaine liqueur
  • The bruleed citrus, for garnish
  • Mint sprigs, for garnish

Instructions

For the Simple Syrup:

  1. Bring the water and sugar to a boil over medium-high heat in a small saucepan and simmer for 5 minutes, stirring frequently, until the sugar is completely dissolved. Allow to cool completely.

For the Lemonade:

  1. Combine the lemon juice, clementine juice, simple syrup (to taste), and water in a large pitcher, mixing well to combine. Taste, and adjust the sweetness as necessary. Chill in the fridge for a couple hours.

For the Brûléed Citrus:

  1. Slice the citrus fruit into ½-inch-thick rounds, leaving the peel in tact. Place the citrus slices on a baking sheet lined with foil and pat them with paper towels to remove extra moisture.
  2. Sprinkle the turbinado sugar over the citrus rounds evenly. Using a kitchen torch, carefully melt the sugar until it is golden and crusty. Alternatively, broil for a few minutes in the oven. Allow the fruit to cool for a few minutes before handling.

To Make the Cocktail:

  1. To a shaker filled with ice, add the lemonade, vodka, and St. Germaine and shake vigorously for 30 seconds or so. Pour the mixture into ice-filled glasses and garnish each glass with one or two slices (depending on the size/choice of fruit) of the brûléed citrus rounds and a sprig of mint. Serve immediately.
