For the Ginger Syrup:
- 1 cup sugar
- 1 cup water
- 1 cup sliced fresh ginger (can leave peel on)
- Zest of 2 clementines
For Two Cocktails:
- Juice of 3 clementines, roughly ½ cup
- Juice of 1 lime, roughly 2 tablespoons
- ¼ cup of the ginger syrup (or to taste)
- ½ cup vodka
- 1½ cups ginger beer
- Fresh mint sprigs
- Additional clementine and lime wedges
Instructions
For the Ginger Syrup:
- Heat the water and sugar together in a small saucepan until it comes to a boil.
- Reduce the heat and simmer until the sugar is completely dissolved. Add in the fresh ginger and clementine zest and then remove the pot from the heat.
- Allow the ginger and zest to steep in the syrup until it is completely cooled. Strain out the ginger and citrus zest. Store cooled syrup in an airtight container in the fridge for up to a week.
For Two Cocktails:
- In a shaker filled with ice, combine the citrus juices, ginger syrup, and vodka. Shake vigorously for a few seconds to mix and chill the ingredients.
- Divide the mixture between two serving mugs filled with ice. Top each glass off with ginger beer, fresh sprigs of mint, and citrus slices. Serve immediately.
