Bacon Cheddar Drop Biscuits with Cinnamon Vanilla Butter

For the Biscuits:

  • 4 strips of bacon, diced
  • 3 cups flour
  • 1½ tablespoons baking powder
  • 1 teaspoon salt
  • 1 stick unsalted butter, cold and cubed
  • 1 cup whole milk, cold
  • 1 cup shredded sharp cheddar

For the Butter:

  • 1 stick unsalted butter, softened
  • 1 teaspoon vanilla extract
  • ½ cup sugar
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground nutmeg

Instructions

For the Biscuits:

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Crisp the bacon in a skillet and then set aside to cool.
  3. While the bacon is cooking, mix together the flour, baking powder, and salt in a large bowl.
  4. Using a fork or a pastry cutter, mix in the cold cubed butter until the mixture is crumbly and there are still some larger chunks of butter.
  5. Stir in the milk, a little at a time, until the dough is moist and holds together.
  6. Fold the bacon, along with the bacon drippings, and the cheese into the batter.
  7. Using a medium cookie scoop, scoop out balls of dough and place them on the baking sheet, keeping about an inch between them.
  8. Bake for 10-12 minutes or until they are puffed and golden. Serve warm with the butter alongside.

For the Butter:

  1. In a medium bowl, mix together the ingredients until well combined. Season, to taste, with a small pinch of salt, if needed. Serve with the warm biscuits.

RECIPE NOTE:

  1. As a short cut, I have bypassed making my own biscuit dough many times and just used boxed biscuit mix. Follow the package instructions but fold in the bacon, drippings, and cheese before baking. Works like a charm when you don’t feel like making them from scratch!
