Description

These homemade apple cider crumb donuts are baked and not fried and topped with a spiced crumb mixture that make them something special. These donuts are a taste of fall!


Ingredients

For the Donuts:

  • Nonstick cooking spray
  • 1¾ cups all-purpose flour
  • 1¼ teaspoons baking powder
  • 1 teaspoon fine sea salt
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon freshly grated nutmeg
  • 12 tablespoons unsalted butter, at room temperature
  • ¾ cup light brown sugar
  • ¼ granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • ½ cup apple cider
  • 1 medium apple, peeled and grated (roughly ½ cup) [See Note]

For the Streusel:

  • ½ cup old-fashioned oats
  • ½ teaspoon ground cinnamon
  • 6 tablespoons all-purpose flour
  • ¼ cup packed brown sugar
  • 2 tablespoons granulated sugar
  • Pinch of salt
  • 4 tablespoons unsalted butter, cold and cubed

Powdered sugar, for topping (optional)


Instructions

For the Donuts:

  1. Preheat the oven to 350°F and coat two 6-count donut pans with nonstick spray.
  2. In a bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  3. In the bowl of a stand mixer, beat the butter and sugars together until light and fluffy, about 2 minutes.
  4. Add the eggs and mix until incorporated. Scrape down the bowl and add in the vanilla. Beat to combine.
  5. Add the flour mixture and mix on low speed until incorporated.
  6. With the mixer running, slowly stream in the apple cider and mix until the batter is smooth and well combined. Fold in the grated apple.
  7. Spoon the batter into prepared doughnut pans, filling them about ⅔ of the way full.

For the Streusel:

  1. Combine the oats, spices, flour, sugars, and salt in a bowl.
  2. Cut the cold butter in until the mixture is crumbly and the butter is evenly distributed. The mixture is ready when it can stick together when pinched between two fingers.
  3. Top the donuts with the streusel topping.
    Bake the donuts for 12-15 minutes, rotating the pans halfway through, or until golden brown and cooked through.
  4. Cool in the donut pan for a few minutes before removing.
  5. Dust with powdered sugar once the donuts have cooled (optional but recommended!).

Notes

  • I like to grate the apple on a box grater, but you could also use a food processor.
