Description

These Cucumber Martinis are the most refreshing cocktail – perfect for a hot summer evening! Light and slightly sweet, these feature fresh cucumber juice, vodka, lime juice, and fresh herbs. Simple but so delicious!


Ingredients

For the Fresh Cucumber Juice:

  • 1 English cucumber, peeled and chopped
  • 1/2 cup water

For the Cocktails:

  • 2 fresh basil or 4 fresh mint leaves
  • Ice
  • 1 oz simple syrup or agave nectar
  • 1 oz fresh cucumber juice
  • 1 oz fresh lime juice
  • 4 oz vodka
  • Cucumber slices, for garnish

Instructions

For the Fresh Cucumber Juice:

  1. Add the peeled and chopped cucumber along with ¼ cup of water to a blender and blend on high for 30 seconds or until the cucumber is completely blended. Add more water, as needed, to help the cucumber completely break down.
  2. Set a fine-mesh strainer over a mason jar or bowl and pour the cucumber puree through the strainer. Push on the solids to extract as much cucumber juice as possible. Discard the solids.

 For the Cocktails:

  1. To a shaker, add the basil/mint and muddle to release the flavor.
  2. Add in ice, simple syrup, cucumber juice, lime juice, and vodka. Cover the shaker well and shake vigorously for 20 seconds to thoroughly mix and chill the ingredients.
  3. Strain the mixture into two martini glasses. Garnish with slices of cucumber and additional herbs and serve immediately while cold.
