Cucumber Martinis

I am a sucker for a cocktail that features cucumber.

On bar menus, you’ll usually see a cocktail that uses cucumber. It’s often paired with other delicious things like citrus, mint, elderflower, gin/vodka, etc. I will almost always order said drink.

I adore the bright flavor of cucumber, and pairing it with vodka and a little sweetness makes it even better. Fresh, bright, and still boozy. My ideal drink.

These Cucumber Martinis are just that. Easy to throw together, refreshing and light, and completely cucumber-y. LOVE.

It starts by making a quick cucumber juice. I do this by blitzing a cucumber and some water together in a blender until completely liquified. Strain out any pulp and you are good to go. It’s actually delicious on its own – I sampled it multiple times.

The rest of the drink is pretty simple. Vodka, lime juice, simple syrup, and some fresh basil or mint. That’s it!

Ingredients You Need for These Cucumber Martinis:

  • English cucumber
  • Water
  • Vodka
  • Fresh lime juice
  • Simple syrup or agave nectar
  • Fresh basil or mint leaves – optional but impactful!

How to Make These Cucumber Martinis:

For the Fresh Cucumber Juice:

  • Add peeled and chopped cucumber along with ¼ cup of water to a blender and blend on high for 30 seconds or until the cucumber is completely blended. Add more water, as needed, to help the cucumber completely break down.
  • Set a fine-mesh strainer over a mason jar or bowl and pour the cucumber puree through the strainer. Push on the solids to extract as much cucumber juice as possible. Discard the solids.

For the Cocktails:

  • To a shaker, add the basil/mint and muddle to release the flavor.
  • Add in ice, simple syrup, cucumber juice, lime juice, and vodka. Cover the shaker well and shake vigorously for 20 seconds to thoroughly mix and chill the ingredients.
  • Strain the mixture into two martini glasses. Garnish with slices of cucumber and additional herbs and serve immediately while cold.

This martini is so delicious on a hot summer evening. I kind of can’t believe how refreshing it actually is.
