This Sheet-Pan Sausage & Peppers Gnocchi is one of the easiest, fastest, and most delicious ways to serve your family a complete meal while only dirtying one baking sheet.

This sheet-pan dinner comes together in roughly 30 minutes and has something for everyone: lean protein, loads of fresh veggies, healthy fats, fiber, and starch.
The best part? It tastes like a meal you spent a lot of time on. So savory and full of flavor and textures! We adore it. The kids and adults in my household are all very happy when this comes out of the oven.

I first learned the sheet-pan gnocchi method from my friend, Jessica, a few years back. Since then, I make a meal using this method multiple times a month. It’s foolproof and guaranteed to give you a great meal with little effort and time.
This version is my riff on sausage and peppers, and boy oh boy, is it delish.

I like to use Italian chicken sausage here, but you can feel free to use whatever sausage your family prefers. I like the leanness of chicken, and I swear, I can’t tell the difference between it and traditional pork sausage. It’s pretty much the only Italian sausage I use now.
Paired with sweet bell peppers and juicy cherry tomatoes? Simply mouthwatering.

Ingredients You Need to Make This Sheet-Pan Sausage & Peppers Gnocchi:
- Bell peppers – use any color you like
- Cherry tomatoes
- Red onion
- Shelf-stable gnocchi
- Uncooked Italian chicken sausage (mild or hot)
- Olive oil
- Seasonings: garlic powder, onion powder, dried Italian herbs, garlic salt, black pepper, and crushed red pepper flakes (optional)
- Garnishes: shaved parmesan cheese and fresh parsley


How to Make This Sheet-Pan Sausage & Peppers Gnocchi:
- Preheat the oven to 425°F and line a large rimmed baking sheet with parchment paper.
- Spread the peppers, tomatoes, onion, and gnocchi out evenly on the baking sheet.
- Remove the sausage from the casings and roll into ½-inch meatballs. Place the meatballs on the baking sheet. Make sure all the ingredients are evenly distributed throughout.
- Drizzle over the olive oil and seasonings and toss everything thoroughly with your hands to evenly coat all the ingredients in the oil and seasonings.
- Transfer the pan to the oven and bake for 15-20 minutes, stirring everything about halfway through. Cook until the sausage is rendered and golden, and the gnocchi and veggies are tender. The tomatoes should be just ready to burst.
- Remove the pan from the oven and while everything is still hot, sprinkle over shaved parmesan and chopped parsley. Serve immediately.

Amazing! I was able to get all of my ingredients at Aldi. It took just a touch longer in the oven, but everything complimented each other. I also ended up slicing my sausge. I love that everything was quick and one pan. I asked my husband, “Make again?” He just nodded twice with a mouthful. Definitely going in my meal plan rotation.
