Description

Meals like this Sheet-Pan Sausage & Peppers Gnocchi are a favorite in our house and with good reason. This is a complete meal (veggies, protein, healthy fats, fiber, and starch) all made on one sheet pan together. It takes 30 minutes to make and tastes incredible. This method for making gnocchi is a staple in my weeknight cooking, and every time I make it, we marvel at how utterly delicious this type of meal is. Italian sausage, loads of fresh veggies, and tender gnocchi are a match made in heaven!


Ingredients

  • 2 bell peppers (any color), seeded and cut into 1-inch chunks
  • 1 pint cherry tomatoes
  • 1/2 red onion, cut into 1-inch chunks
  • 1 (16-oz) package shelf-stable gnocchi
  • 1 lb uncooked Italian chicken sausage (mild or hot)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian herbs
  • 1 teaspoon garlic salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/3 cup shaved parmesan, for garnish
  • 1/3 cup chopped parsley, for garnish

Instructions

  1. Preheat the oven to 425°F and line a large rimmed baking sheet with parchment paper.
  2. Spread the peppers, tomatoes, onion, and gnocchi out evenly on the baking sheet.
  3. Remove the sausage from the casings and roll into ½-inch meatballs. Place the meatballs on the baking sheet. Make sure all the ingredients are evenly distributed throughout.
  4. Drizzle over the olive oil and seasonings and toss everything thoroughly with your hands to evenly coat everything in the oil and seasonings.
  5. Transfer the pan to the oven and bake for 15-20 minutes, stirring everything about halfway through. Cook until the sausage is rendered and golden, and the gnocchi and veggies are tender. The tomatoes should be just ready to burst.
  6. Remove the pan from the oven and while everything is still hot, sprinkle over shaved parmesan and chopped parsley. Serve immediately.
