When I first was thinking up this recipe, I knew I wanted to incorporate beer, cheese, and mustard into a burger. The flavor combo is hard to beat, and I knew if it was showcased on a juicy, beef burger, it would be epic.
I decided to flavor the burgers themselves with lager beer and lots of savory spices and then top with gouda cheese and a homemade mustard-horseradish mayo.
This is where I do the whole “pat myself on the back” bit. Because these came out so, so much better than I ever imagined!
Each bite is bursting with savory umami goodness, and it’s all wrapped up in one of my favorite food packages: a cheeseburger.
I cannot stress how good these are. Dan devoured two in record time, declaring them one of the most flavorful burgers he’s ever had.
The proof is in the pudding!
Not only are the burgers themselves flavored with lager beer and a delicious combo of smoked paprika, cumin, onion powder, and garlic salt, but the tangy-spicy mayo on top is so good, I could eat it off a shoe.
The mayo has Dijon mustard, whole grain mustard, and a hefty dose of prepared horseradish. The little mustard seeds just pop in your mouth – I love it. This mayo is a flavor BOMB, and it would be so good with a soft pretzel or spread on a grilled cheese.

For the Burgers:
- Minced garlic
- Worcestershire sauce
- Lager beer
- Smoked paprika
- Onion powder
- Ground cumin
- Black pepper
- Garlic salt
- Lean ground beef
- Sliced gouda cheese
For the Mayo :
- Mayo
- Dijon mustard
- Whole grain mustard
- Prepared horseradish
- Salt and pepper
For Serving:
- Burger buns
- Lettuce
- Tomatoes
- Pickles
How to Make These Smoky Beer Burgers with Gouda & Mustard-Horseradish Mayo:
For the Burgers:
- Combine all the ingredients for the burgers in a mixing bowl, being careful to not overwork the meat. Form the mixture into four equal patties.
- Heat a grill to medium-high and add the burgers. Cook for 4-6 minutes per side, depending on how “well done” you prefer your burgers.
- During the last minute of cooking, top each burger with gouda cheese and close the lid of the grill so the cheese melts. Remove from the grill and tent the burgers with foil until ready to serve.
For the Mayo:
Whisk together all the ingredients and season, to taste. This can be made ahead and kept in the fridge until serving time.
To Serve:
Serve the burgers on buns with desired toppings and the mayo.
