Ingredients
Scale
For the Ranch Fries:
- 1 (32-oz) package frozen french fries (use your favorite!)
- 2 teaspoons avocado oil (or any neutral-flavored oil)
- 1 tablespoon dried ranch seasoning
- Pinch of salt and pepper
For the Chicken:
- 1 teaspoon avocado or olive oil
- 2 chicken breasts
- 1 tablespoon butter
- 1/3 cup buffalo hot sauce
For the Toppings:
- 2 cups shredded cheddar or jack cheese (or a combo)
- 1/2 cup chopped scallions
- Ranch dressing, for drizzling
- Additional buffalo hot sauce, for drizzling
- 1/2 cup crumbled blue cheese (skip if you don’t like blue cheese)
Instructions
For the Ranch Fries:
- Preheat the oven to 450°F and spread the fries out in an even layer on a baking sheet lined with parchment paper.
- Drizzle over the oil and then sprinkle over the ranch seasoning, salt, and pepper. Using your hands, toss the fries well to coat in the seasoning.
- Bake for 20-25 minutes, or according to the package directions, until the fries are crispy and golden.
- While the fries bake, prepare the chicken and other toppings.
For the Chicken:
- In a skillet, heat the oil over medium heat. Add the chicken breasts, seasoning with a little salt and pepper, and cook for 5 minutes per side.
- Add the butter to the pan and allow it to melt. Stir in the buffalo sauce. Cook for another 2-3 minutes, turning the chicken occasionally to coat in the buffalo sauce.
- Remove from the heat and allow to cool slightly before shredding or chopping. Make sure to toss the shredded chicken with any residual buffalo sauce from the pan.
To Assemble:
- Once the fries are done, layer the buffalo chicken, cheeses, and half the scallions over the fries.
- Return the tray to the oven for 5 minutes or until the cheese is gooey and melted.
- Remove from the oven and top with the remaining scallions, a drizzle of ranch dressing, a drizzle of buffalo sauce, and blue cheese crumbles (if using).
- Serve immediately while everything is hot. I like to serve this with additional ranch and buffalo sauce on the side for dipping.
