Description

This Cookie Butter Banana Bread is a slice of heaven! Buttery, fluffy banana bread has cookie butter baked into the batter and swirled throughout to create the dreamiest sweet treat. If you love cookie butter, you will love this banana bread!


Ingredients

  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons avocado or olive oil
  • 1 cup granulated sugar
  • 3/4 cup cookie butter (Biscoff or Trader Joe’s brand), plus another 1/3 cup for swirling
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 3 very ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1/4 teaspoon baking powder
  • 1 cup plain Greek yogurt (I use 2%)

Instructions

  1. Preheat the oven to 350°F and liberally grease a 9 x 5-inch loaf pan.
  2. In a large mixing bowl, whisk together the melted butter, oil, sugar, ¾ cup of cookie butter, vanilla, eggs, and bananas. Mix until all ingredients are well incorporated.
  3. Whisk the flour, baking soda, salt, and baking powder together in another bowl.
  4. Stir the flour mixture into the banana mixture until it is almost completely combined but not fully mixed in. Stir in the yogurt and mix until the batter is smooth and well combined.
  5. Pour half the batter into the prepared pan and dollop a few tablespoons of cookie butter evenly over the top.
  6. Pour the remaining half of the batter over top and then dollop a few more tablespoons of the cookie butter over top.
  7. Using a butter knife, gently swirl the cookie butter into the batter. Don’t overmix – big swirls or dollops of cookie butter are ideal here.
  8. Transfer the pan to the oven and bake for 50-60 minutes, or until the bread is golden, puffed, and a toothpick inserted into the center comes out clean (ovens will vary so I recommend checking it around 50 minutes and adding 5 minute increments, as needed, until it is done. My oven took the full 60 minutes to bake).
  9. Allow to cool before slicing.
