I, like many people, adore banana bread. It’s nostalgic and comforting to me, and I love that it is a way to reduce food waste (aka, use up those old bananas on the counter).
I pride myself on making great banana bread. Today’s recipe, however, may have taken down all my previous recipes. It’s that good.
This Cookie Butter Banana Bread is a slice of heaven. Oh. My. Gosh.
I have to thank my oldest son for the inspiration. A few weekends ago, I had plans for banana bread. When I asked him for input on what kind to make, he said “what about a cookie butter banana bread?”
The rest is history. My little genius.
I immediately started brainstorming a recipe and made a few loaves that were on the right track. I finally perfected it, and while I would say that we’ve all grown tired of cookie butter banana bread trials, it would be a lie.
This stuff is DELICIOUS.
Even my husband, one who doesn’t usually love banana bread, couldn’t stop eating this. He popped in from doing yard work, a slice hanging out of his mouth, to tell me “Hun, this is REALLY good banana bread.”
So, there you have it.
This banana bread is special in that we have cookie butter baked right into the batter itself AND dollops of cookie butter swirled throughout. My mouth is watering just typing this out.
Unlike other banana bread recipes, this one does not include any spices like cinnamon or nutmeg. In my testing, I realized that the spices were taking away from the pure cookie butter flavor. So, this recipe keeps things pretty simple.
The resulting bread is buttery, fluffy, sweet, and tastes like cookie butter and bananas! Just what I was going for.
Ingredients for This Cookie Butter Banana Bread:
- Unsalted butter
- Avocado or olive oil
- Granulated sugar
- Cookie butter (Biscoff or Trader Joe’s brand)
- Vanilla extract
- Eggs
- Very ripe bananas
- All-purpose flour
- Baking soda
- Kosher salt
- Baking powder
- Plain Greek yogurt (I use 2%)
How to Make This Cookie Butter Banana Bread:
- Preheat the oven to 350°F and liberally grease a 9 x 5-inch loaf pan.
- In a large mixing bowl, whisk together the melted butter, oil, sugar, cookie butter, vanilla, eggs, and bananas. Mix until all ingredients are well incorporated and mostly smooth.
- Whisk the flour, baking soda, salt, and baking powder together in another bowl.
- Stir the flour mixture into the banana mixture until it is almost completely combined but not fully mixed in. Stir in the yogurt and mix until the batter is smooth and well combined.
- Pour half the batter into the prepared pan and dollop a few tablespoons of additional cookie butter evenly over the top.
- Pour the remaining half of the batter over top and then dollop a few more tablespoons of the cookie butter over top.
- Using a butter knife, gently swirl the cookie butter into the batter. Don’t overmix – big swirls or dollops of cookie butter are ideal here.
- Transfer the pan to the oven and bake for 50-60 minutes, or until the bread is golden, puffed, and a toothpick inserted into the center comes out clean (ovens will vary so I recommend checking it around 50 minutes and adding 5 minute increments, as needed, until it is done).
- Allow to cool before slicing.

So delicious! I use about 5.5 oz of yogurt (because that is the size of the little cups), and 1 stick of butter (no oil) and it was great.

I have attempted your recipe 4 times and although it takes delicious, I can’t figure out what I’m doing wrong! I am following the recipe exactly and the middle of my bread does not cook. This time I tried covering with tin foil and it overflowed 🤯 What do I do!

Oh no! I am so sorry to hear this. I’m not sure what the issue is (I’ve made this exact recipe tons of times with no issue), but it could be the simple fact that all ovens are a bit different. Are you using a 9 x 5 inch pan? Sometimes loaf pans are smaller than that. If you have a second loaf pan, maybe divide the batter between two pans and see how that works out? I wish I knew the reason this was happening. Let me know how it goes if you attempt it again. It’s such a delicious banana bread – I hate that you aren’t getting to enjoy it as intended.
