Loaded Baked Potato Quiche

This Loaded Baked Potato Quiche is a fun twist on a breakfast classic. Think all your favorite components of a fully-loaded baked potato in quiche form. We’ve got hash browns, bacon, cheese, scallions, and sour cream all whipped up into a fluffy egg quiche! So fun and so delicious!

I love a good quiche.

It’s such a simple thing to make but people are always impressed! I love how satisfying quiche can be, and the flavor possibilities are endless!

Case in point: I created a Loaded Baked Potato Quiche! All the component you know and love about a fully-loaded baked potato in quiche form. It’s as delicious as it is fun.

To keep things easy, I love using a store-bought pie crust for this recipe. I do occasionally try my hand at homemade pie dough, but there are actually some great high-quality pie crusts available at the store these days, and 9 times out of 10, that’s what I opt for.

The filling for this quiche has all hash brown potatoes, crispy bacon, cheddar cheese, and scallions. The egg mixture has sour cream mixed in for that classic tangy flavor. The resulting quiche is fluffy and flavorful with hearty bites of potato, cheese, and bacon.

This was a huge hit with my family. We’re definitely a savory breakfast family, and this one hits the spot.

Ingredients You Need to Make This Loaded Baked Potato Quiche:

  • Store-bought pie crust (or homemade)
  • Frozen hash brown potatoes, defrosted and drained well
  • Bacon
  • Cheddar cheese
  • Scallions
  • Eggs
  • Sour cream
  • Salt and pepper

How to Make This Loaded Baked Potato Quiche:

  • Preheat the oven to 375°F.
  • Prep your pie dough in a 9-inch pie dish.
  • Spread the defrosted potatoes and cooked bacon on the bottom of the pie dough. Top with the grated cheddar cheese and scallions.
  • In a medium bowl, whisk together the eggs, sour cream, salt, and pepper until well combined.
  • Slowly pour the egg mixture over the fillings in the pie dish.
  • Transfer the pan to the oven and bake for 40-45 minutes, or until the custard is set and the top is golden brown. Allow to cool before slicing and serving. I love to serve this with a dollop of sour cream on top, along with some chopped chives or scallions. Serve warm, chilled, or at room temperature.

  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Additional sour cream, for garnish
  • Additional scallions, for garnish

Instructions
