Remember that incredible grilled chicken I shared with you last time? Well, I found its perfect accompaniment.
This super simple, super yummy cucumber salad is the ideal side dish for that flavor-packed chicken. It is light, crisp, and refreshing, which works perfectly with the bold, spicy flavors of the chicken.
I’m almost embarrassed to call this a “recipe” because it is just so darn easy. Slice some cucumbers, toss with an Asian dressing, and serve. It really couldn’t be any easier. Don’t tell your family and friends how easy it is because the flavors will never give you away. They are top notch.
Just like this recipe, I’m going to keep this short and sweet. Make these cucumbers. They’re great with anything grilled or spicy!
Sesame Cucumber Salad (makes 4 servings)
3 English (seedless) cucumbers, thinly sliced (peeled, if desired)
2 tablespoons toasted sesame seeds
2 tablespoons rice wine vinegar
1-2 tablespoons sugar (to taste)
1 teaspoon toasted sesame oil
2 scallions, finely chopped
Pinch of red pepper flakes
Combine everything in a bowl and toss to mix. Adjust seasoning as necessary. Can be made and kept in the fridge a few hours before serving.
