Hi, friends! Did your short week fly by? Mine did! Short weeks always throw me a bit. While I looooooove the extra day off, I always feel like Tuesday is a mad scramble to have my act together…with one less day to do it all. It’s wonderful and stressful all at once. Just me?
Do you guys have any fun plans for the weekend? Our pool is open but is requiring some maintenance, so it’s not useable yet. With the hot and humid weather, though, Dan and I are planning to spend some time poolside regardless. Having Kieran outside is torture right now. I mean, it’s amazing, of course…but he’s so obsessed with the pool, and it’s kind of hard to explain to a toddler that swimming isn’t an option. So, we’ll probably sneak out there when it’s nap time this weekend.
I also have lots of cooking on my agenda (duh). Today, I’m attempting to assemble and frost my first four-layer cake. Wish me luck, guys. I am so NOT a cake person. But I am obsessed with how pretty they can look, and I’m going to attempt to create something that does not resemble a complete hot mess. If all goes well, I’ll share the cake with you guys sometime this month. Need all the good vibes you can spare. Seriously.
Oh, and today is National Donut Day! I am such a loser and never know when these food holidays are happening, but National Donut Day is definitely something I can get behind. I wish I could have had my act together to share a donut (doughnut? what do you guys prefer? I always go with donut…because that’s how I see the word in my head, haha) with you guys today. Instead, check out these and these from the archives. Next on my list of donut goals: yeasted fried donuts. Yes. I need to figure that one out at home. These Honeycomb Sugar Doughnuts look so cool! I love honeycomb on a cheese plate, but these may have to be my next honeycomb experiment.
These Mini Chicken Meatballs with Crispy Potatoes & Romesco Sauce will likely be a weeknight meal soon. I can’t wait.
These Sesame Sriracha Buddha Bowls with Black Rice, Baked Tofu, & Massaged Kale are definitely on my must-make list. So many awesome (and healthy!) flavors.
Of course these Lemon Cheesecake Doughnuts sound awesome to me. I’m a lemon FAH-reak.
This Mango Habanero Salad with Seared Scallops is so, so, sooo gorgeous! Plus, I’m a sucker for a seared scallop. Gimme.
Can you even with these PB & J Donuts?!? I can’t.
These Beer Battered Onion Rings with Jalapeño Aioli look like the perfect munch.
This Soy-Free Vegan Mayo made with aquafaba is so freaking cool. I still have yet to try out the aquafaba trend, but this looks like the perfect way to start.
This Warm Kimchi Cheese Dip is soooo happening! My sister LOVES kimchi, and I may have to pull this one out for her.
In case you missed things around these parts: I shared these insanely good strawberry muffins earlier this week. They are THE BEST muffins to date (aka: cupcake impersonators).
