Hi there! Did this week seem to drag by for you? It did for me. I was exhausted all week and feeling a bit run down. Fingers crossed that I’m not getting sick. My lifesaver this week: Sarah’s cold brew. OMG, you guys. It’s SO GOOD. And easy! I didn’t have cheesecloth on hand when I made it, so I just used a mesh strainer lined with a coffee filter for the straining part. And it worked like a charm. I’ve been enjoying a huge glass every morning of this week, tinged with a little homemade mint simple syrup (minted coffee may sound SO weird, but I promise you, it works) and cream. What can I say? I like my coffee sweet and creamy. And I’m sort of unapologetic about it!
Despite the cold brew happiness, this week went by a little slow for my tastes. BUT! Today is finally Friday! And I have lots to celebrate this weekend!
My mom’s birthday is today, my sister’s birthday is tomorrow, and Father’s Day is on Sunday. See? Lots. It’s always been a three-way celebration on Father’s Day weekend, which has been perfect for busy schedules and such. It also amps up the fun factor a little bit too because we’re celebrating THREE different things at once. What are your plans for Father’s Day? Since Dan is a dad now too, Kieran and I will be getting up early on Sunday to make him a special breakfast. Then, we’ll probably do gifts and just relax until the rest of the family gets here. We’re having everyone over for birthday-Father’s Day BBQ. I’m making hot dogs and these burgers (Dan’s request) as well as another layer cake (chocolate raspberry this time). Wish me luck!
Oh, and our pool is finally repaired! If you follow along on Snapchat, then you know that we’ve had a murky green swamp in our backyard for almost a month now. Needed parts came in this week, and we’re finally back up and running. It’s back to a pretty icy blue color. Thank goodness. The weather this weekend is supposed to be FABULOUS, so I’m thrilled that we’ll be able to actually use the pool on Sunday.
