This Creamy Italian Sausage & Tortellini Soup is EVERYTHING I want in a winter meal. It’s hearty, it’s satisfying, it’s absolutely, downright delicious.
And we can’t get enough of it! I’ve made it at least once a month since October, and I don’t see an end in sight. Both Dan and I are smitten with the flavors and comfort of this soup. And that is saying a lot because Dan is “not a soup guy.”
If you fall into his camp, I urge you to try this one anyway. It has something for everyone.
It starts with Italian sausage. I like to use chicken or turkey sausage when I can find it because I prefer the leanness, but pork sausage will work just fine. You can use hot or sweet Italian sausage — both are delicious!
To the sausage, we add lots of aromatic savoriness in the way of onions, garlic, tomato paste, and dried Italian herbs. Then we add in some canned tomatoes, broth, a little half-and-half or cream, baby spinach, and the tortellini.
The results are mouthwateringly satisfying. A little meat, a little veg, a little pasta and a slurp-worthy broth full of flavor. It is seriously SO good!
Ingredients You Need to Make This Creamy Italian Sausage & Tortellini Soup:
- Olive oil
- Sweet or hot Italian chicken sausage (turkey or pork sausage will work – I just prefer the leanness of chicken)
- Onion
- Garlic
- Tomato paste
- Dried Italian herbs
- Garlic salt
- Black pepper
- Red pepper flakes
- Canned diced tomatoes
- Low-sodium chicken broth
- Water
- Bay leaves
- Heavy cream or half-and-half
- Baby spinach
- Cheese tortellini (or any flavor you prefer)
How to Make This Creamy Italian Sausage & Tortellini Soup:
- Heat the oil in a large pot or Dutch oven. Add the sausage and break it up with a spoon. Cook, stirring frequently, for about 5 minutes or until the sausage is mostly cooked through.
- Add the onion and cook for another 5 minutes.
- Add the garlic, tomato paste, herbs, and seasonings and cook for another couple minutes.
- Add in the canned tomatoes and chicken broth, making sure to scrape up any browned bits from the bottom of the pot. Stir in the water and the bay leaves.
- Bring to a simmer and then cover the pot. Simmer over low heat for about 30 minutes.
- Stir in the cream, spinach, and tortellini. Cover the pot and cook for another couple minutes or until the spinach is wilted and the tortellini are cooked through. Season, to taste, with additional seasonings. Serve while hot.

- 1-lb package sweet or hot Italian chicken or turkey sausage, removed from casings
- 1 large onion, diced
- 4 garlic cloves, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried Italian herbs
- 1 teaspoon garlic salt
- 1 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional – I skip if using spicy sausage)
- 1 (14-oz) can diced tomatoes
- 4 cups low-sodium chicken broth
- 2 cups of water
- 2 bay leaves
- 1/2 cup heavy cream or half-and-half
- 5 oz baby spinach
- 12 oz cheese tortellini (or any flavor you prefer)

Notes
I prefer the leanness of chicken or turkey sausage here, but if you cannot find it, use Italian pork sausage. The flavor won’t be much different.
