Hi, friends! This summer is just flying by, isn’t it? I can’t believe the first week of AUGUST is coming to a close. Before we know it, it will be Labor Day and then like two seconds later it will be full-on-pumpkin-everything season. Not that I’m complaining! Fall is my favorite season of them all, but it’s always a little melancholy to close the summer chapter.

We are taking a family vacation to the Outer Banks in North Carolina at the end to the month. Dan’s family is having a huge reunion down there, and we’re flying down. Flying for the first time with Kieran. Flying with a very strong-willed, opinionated 23-month old. Oy. Send lots of luck and prayers our way! The flight is under two hours, so we’re banking on that working in our favor.

That all said, we’re pumped for the trip and can’t wait to get Kieran on the beach. We only live 45 minutes from some ares of the Jersey shore, and while we LOVE it, we haven’t made it down a single time this summer yet. Crazy! I know. Dan and I are definitely jonesin’ for some beach time and DEFINITELY looking forward to a vacation. Taking the time to unplug and reconnect with loved ones is so fabulously awesome.

What are you guys up to this weekend? I am nerding out SO HARD over the Olympics (I always do – especially the summer ones). I can’t wait to make and eat lots of fun snacks while watching the gymnastics, swimming, diving, and running in awe. Dan and I have a fun feast planned for the opening ceremonies for tonight. CAN’T WAIT!

Speaking of not being able to wait, I am so excited to share some of my favorite finds this week. People are killin’ it.

I am seriously making these white chocolate and peach s’mores this weekend. I can’t even stand to look at those pictures a minute longer without trying them out!

These watermelon rose margaritas are also happening STAT. Three of my favorite things combined! Weekend cocktail perfection.

This 3-ingredient elderflower sangria is next on my list for sure. I love how simple it is. Also, I’m a huge sucker for anything elderflower.

These crispy avocado egg rolls look fantastic. I am hungry at this moment and feel like I could easily put down several (a dozen?) of those.

These lentil feta fritters with fresh mint slaw are making my mouth water. They sound so tasty and refreshing!

These spiralized refrigerator dill pickles look like so much fun. I am trying to use my spiralizer as much as possible, and these look like the perfect reason to bust it out.

These baked pineapple chicken bowls are the newest addition to next week’s meal plan. Love how simple (and tasty) they sound.

Looking for pasta perfection? I think I may have found it with this preserved lemon pappardelle with fried pine nuts and feta! OMG.

Love the idea of these baby dutch babies! So freaking cute.

I adore watermelon gazpacho, and this version is looking fan-freaking-tastic. Yum.
