Say hello to the EASIEST cocktail ever to unofficially kick off the summer season!
I know summer doesn’t officially start for a few more weeks, but Memorial Day always feels like the start for me.
We are fortunate enough to have a swimming pool, and we always aim to have it open by now. Given how gorgeous the weather here has been lately, we’ve already used it a couple times in the past week that it has been opened for the season. Good times.
And I’m not sure exactly what it is, but whenever I am relaxing poolside, I want a fun drink in my hand. It doesn’t always have to be a cocktail. Sometimes a flavored seltzer will do. But when I DO want a cocktail, it has to be easy and it has to be refreshing.
And that’s exactly what these pineapple gin and tonics are! They only require four ingredients: gin, tonic, limes, and pineapple juice. Oh, and if you want fresh wedges of pineapple, I guess that makes five ingredients. These couldn’t be simpler to make. And when I’m hightailing to get poolside, you better believe it has to be a quick drink to make the cut.
Gin and tonics are one of my favorite things to drink but I often forget about them in the face of fancier, more elevated cocktail options. Especially when I’m out. I rarely order a plain gin and tonic. But when I do, I’m always pleasantly reminded of how much I really like them. They’re super refreshing and not cloyingly sweet, like so many other options these days.
The key to a good gin and tonic for me is LOTS of fresh lime juice. I think it totally makes them, and it helps to cut some of the more pungent flavors in the glass. Freshens it up, if you will. The recipe, as written below, definitely is heavy on the lime juice. The fun thing about simple drinks like this one is that you can customize it easily to your tastes. Not sweet enough? Add an extra splash of pineapple juice. Too tangy? Cut back on the lime a bit. Make it yours!
I love this twist because pineapple always tastes like straight up vacation to me. Tropical, warm, and sunny. That’s what I think about whenever I eat (or drink!) pineapple.
And I think that association is juuuuust right for the start of summer, official or not.
Pineapple Gin & Tonics
- Yield: makes 4 cocktails (easily multiplied) 1x
Ingredients
- 6 oz pineapple juice
- 8 oz gin
- 12 oz tonic water
- Juice of 3 limes
- Lime wedges, for serving
- Pineapple slices, for serving
Instructions
- Pour the pineapple juice into four glasses filled with ice, dividing evenly between the glasses.
- Add the gin and lime juice, dividing evenly between the glasses. Stir gently with a spoon or straw to combine.
- Top each glass off with tonic water and garnish each glass with fresh lime wedges and pineapple slices. Serve immediately.
