Happy first Monday of 2015!
Is anyone as “blah” about the new year as I am? I just wish I could slow down time and keep the years from passing so quickly. Like, how in the world is it 2015 already?!? I feel like it we were battling the possible implications of Y2K like…yesterday. Sigh. Bah humbug. At least having the new year fall on a Thursday made it seem like 2015 didn’t actually start until TODAY. In my mind, 2014 totally ended last night.
Anyway. For those of you looking toward the new year with a better attitude than me, and if you are interested in a clean slate (whatever that means to you), I’ve got a healthy and satisfying salad to jumpstart your fresh outlook on life. This salad has a little something for everyone. It’s healthy and flavorful with lots of varying textures and tastes. My kinda salad.
I bet it’s a hell of a lot better than some of those kale smoothies you may have been researching and planning for these past couple weeks. Not that I’m knocking the green smoothies. I love them. But sometimes, I really have to gear myself up to chug down a cold glass of pureed greens. Sometimes, I’d rather eat my greens with things like cheese, nuts, and dried fruit instead. Oh, and let’s not forget the apple vinaigrette! Sweet, tart, and tangy.
Doesn’t sound so bad, now does it?
Hmm. Maybe 2015 isn’t off to such a bad start.
Apple-Chicken Salad with Feta & Apple Vinaigrette
- Yield: 4 servings 1x
Ingredients
For the Vinaigrette:
- ¼ cup apple cider
- 2 tablespoons white balsamic vinegar
- 1 teaspoon apple cider vinegar
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- ½ cup extra-virgin olive oil
- Salt and pepper, to taste
For the Salad:
- 10 cups baby arugula
- 2 chicken breasts, cooked and diced
- ¼ thinly sliced red onion
- ½ cup crumbled feta cheese
- ¼ cup roasted pecans
- ½ cup dried cranberries or cherries
- 1 large apple, thinly sliced
Instructions
For the Vinaigrette:
- Place all the ingredients in a blender and puree until smooth. Check seasonings and adjust as necessary.
For the Salad:
- Toss all the salad ingredients together with the vinaigrette. Serve immediately!

The apple vinaigrette sounds fantastic! I’ve been looking for some new easy homemade salad dressings. I’m definitely not going to be drinking any kale smoothies anytime soon – this looks infinitely tastier 🙂
