Hi, hi! Whew, what a week. It was another busy one, folks. I’m moving through the post-election stages of grief, and I’m finally reaching the “acceptance” stage. Not that I’ll ever be OK with the results or with the policies our president-elect wants to put in place, but I’m accepting it as reality and trying my best to move on with a good attitude, living my life in a way that spreads the values in which I believe so passionately. Because that’s all we can really do, right?
Anyway. Can you guys believe Thanksgiving is less than a week away?! I am in the denial stage on that one. I, fortunately, am not hosting it this year, so I can take it easy for the most part. My parents are hosting, and I’m bringing along some appetizers, a side, and dessert. Nothing too stressful. Thanksgiving may be my most favorite day of the year. In my family, it’s a day-long affair. Most of us stay in our PJs for most of the day, which just makes things seem cozy. It also helps with the fact that we basically eat all day. PJ pants are much better for that than jeans/nice slacks. Just ask Joey from Friends.
This week, I shared a couple easy appetizers that you should definitely whip up soon, if not for Thanksgiving day itself. This burrata and squash toast is enough to make me squeal, and these soppressata and goat cheese pastry pinwheels are soooo much easier than they look, on top of tasting pretty darn fantastic. They’ll start things off right, for sure.

I am always on the hunt for slow-cooker dinner ideas, and this one is next on the list to try: slow-cooker chicken cacciatore! Love it.
I am not a fan of pie, generally speaking. I would pick a ton of other desserts over pie. BUT! This deep dish double chocolate pecan skillet pie is making my mouth water.
I adore sweet potato fries AND homemade aioli, so it’s no surprise that Laura’s take on these two things would spark my interest. She breaks it all down for us, too, which is awesome.
