Two of my favorite things on earth have been mashed up into magic. Pure magic, I tell ya.
French onion soup meets the French bread pizzas from my childhood and I am IN LOVE.
There are few things better on this earth than a bowl of really good French onion soup, loaded to the brim with savory broth and sweet onions and then topped off with bread and melted cheese. I mean. It’s the best.
I thought it would be fun to make a French onion soup pizza. Minus the actual soup, of course. But all the flavors we know and love from that soup ON a pizza.
And why not take it to the next level and make it a French bread pizza? After all, that soup is always served with good, crusty bread on top.
The key to making this taste like the soup we all know and love is to take your time with the onions. Caramelized onions can’t really be rushed, especially when they are a main flavor component of a dish. So start them out low and slow and let them release all their magic. They’ll get sweet and tender and have insane flavor.
Speaking of flavor, we’ll enhance them with all the things you find in your favorite French onion soup broth.
A little beef consommé, some thyme, garlic, and vermouth (or sherry or white wine!) go into the mix to get that classic flavor. The caramelized onions are sweet and buttery and then the savoriness of the other ingredients really sends them over the top. They taste like a bite of French onion soup when everything is said and done!
All that’s left to do is to pile them onto toasty French bread halves and smother them in cheese. I like a combo of gruyere (the classic soup cheese), mozzarella (for ultimate gooeyness), and a little parmesan (for some bite).
Into the oven it all goes until cheesy, gooey perfection is achieved.
I wish you were here to take a slurpy, glorious bite with me. These are SO. GOOD. They really taste like what they say they are: a mash up between French onion soup and a French bread pizza.
Heaven.
I love to slice these up family style and serve them as you see in the pictures – just spread out on a board or platter for everyone to help themselves. This makes for an incredibly delicious and satisfying meal – just add a light side salad or some roasted veg and you are good to go.

Description
These French Onion French Bread Pizzas are a mash up of two favorites: French onion soup and French bread pizzas. All the flavors of the soup we know and love on a crusty, cheesy, irresistible pizza!
Ingredients
For the Onions:
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 3 large onions, thinly sliced
- 3 garlic cloves, minced
- 1 tablespoon brown sugar
- ½ cup dry sherry, vermouth, or white wine
- 1 (10.5-oz) can beef consommé
- 3 sprigs fresh thyme
- Salt and pepper, to taste
For the Pizza:
- 1 large loaf of crusty bread (Italian, French, ciabatta, etc)
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- ½ teaspoon garlic salt
- ½ teaspoon dried Italian herbs
- 2 cups grated gruyere cheese
- 1 cup grated mozzarella cheese
- ½ cup grated parmesan cheese
- Fresh herbs, for serving
Instructions
For the Onions:
- In a large skillet, melt the butter and oil together over medium heat.
- Add in the sliced onions and a generous pinch of salt and cook, stirring frequently, for about 10 minutes, or until the onions are softened.
- Add in the garlic and brown sugar and reduce the temperature to medium-low. Cook, stirring frequently, for about 20 minutes.
- Stir inthe sherry/vermouth/wine, beef consommé, and thyme sprigs. Season with more salt and pepper. Simmer for about 10-15 minutes or until the liquid has mostly absorbed and the mixture is thickened. Season, to taste, with salt and pepper as needed. Set aside.
For the Pizzas:
- While the onions are cooking, preheat the oven to 450°F.
- Halve your loaf of bread lengthwise and place on a baking sheet. Scoop out some of the center insides of the bread with your hands, creating a well in the middle of each bread loaf half.
- Melt the butter in a small bowl in the microwave and then stir in the olive oil, garlic powder, garlic salt, and dried herbs. Brush the mixture all over the cut surface of the bread.
- Bake the bread for 10 minutes or until it is toasty and lightly golden around the edges.
- Carefully top the bread with the caramelized onions, pushing the onions into the well you created.
- Top the onions with the three cheeses, spreading them all out evenly.
- Bake for 10-15 minutes or until the cheese is melted, bubbly, and golden brown in spots.
- Remove from the oven, allow to cool for a few minutes, and then slice into wedges or thick slices for everyone to enjoy. Garnish with a few fresh thyme or parsley leaves, if desired.
