There’s just something so quintessential about curling up on a chilly fall or winter evening with a hot bowl of soup. It warms the soul.
This Creamy Italian Sausage Gnocchi Soup is everything I want in a soup this time of year.
It’s cozy, hearty, nourishing, and packed with flavor. A whole meal in a bowl!
This soup starts off by browning up some Italian sausage. I prefer chicken sausage over pork for its leanness (I really can’t taste a difference in the end), and we like a spicy sausage. That said, you can use a mild/sweet sausage and add heat by way of red pepper flakes (if desired), or you can even use pork sausage. This soup would ALSO be delicious with a chorizo-style sausage — the flavors would still be fabulous.
I also love using chicken bone broth here (and all my soups, really), because it adds a TON of richness/flavor and ups the protein content by quite a bit. It’s a simple swap, but I don’t think I’ll ever go back. If you haven’t tried bone broth as the base of your soups and stews yet, I urge you to try it. It makes such a difference in the end flavor!
If you want to keep this dairy-free, swapping in a can of full-fat unsweetened coconut milk would work great in place of the cream.

Ingredients You Need to Make This Creamy Italian Sausage Gnocchi Soup:
- Olive oil
- Italian chicken sausage (sweet or spicy), removed from casings
- Onion
- Carrot
- Celery
- Garlic
- Fresh rosemary
- Chicken bone broth
- Lacinato kale
- Shelf-stable gnocchi
- Heavy cream or half-and-half
- Grated or shaved parmesan cheese, for serving
How to Make This Creamy Italian Sausage Gnocchi Soup:
- Heat a large pot over medium heat and add the olive oil. Add the sausage and break up with a spoon. Cook for 5 minutes or until the sausage is mostly browned and cooked through.
- Stir in the onion, carrots, and celery and cook for another 5 minutes. Stir in the garlic and rosemary.
- Sprinkle the flour evenly all over the sausage and veggies and then stir to incorporate.
- Slowly stir in the broth, making sure to scrape up any bits on the bottom of the pan.
- Bring to a simmer and cook for 20 minutes, stirring occasionally, or until the soup is beginning to thicken.
- Stir in the kale and gnocchi and cook until tender – this only takes a couple minutes.
- Stir in the cream and season, to taste, with salt and pepper. Serve while hot, garnished with shaved or grated parmesan.

I prefer chicken sausage over pork, but you can certainly use Italian pork sausage here. Mild or spicy sausage works – adjust to your tastes!

First, brown some Italian sausage for this soup. We enjoy spicy sausages, and I prefer chicken sausage to pig sausage since it’s thinner (I can’t tell the difference in the end). Red pepper flakes can be used for more spice if preferred, and pig sausage or mild/sweet sausage can be substituted. This soup might still taste better with chorizo-style meat added.
