No, no, there is not.
My kids and I eat a full melon a week in the summer, and we really can’t get enough. Icy cold watermelon on a hot day is simply the best.
Beacuse I love it so, I am always trying to come up with fun ways to enjoy watermelon.
This Watermelon Cucumber Salad with Hot Honey Vinaigrette is my newest favorite thing.
The salad is simple and VERY easy to throw together.
We have sweet, juicy watermelon, crunchy cucumbers, fresh mint and basil, salty feta cheese, and an addictingly delicious hot honey vinaigrette.
Swooning yet? Because I sure am.
This type of salad gets me so excited in the summer. If the kids and I are spending a day poolside, light and quick meals are key. Bonus if it’s refreshing! And this one is all of those things and then some.
Ingredients You Need to Make This Watermelon Cucumber Salad with Hot Honey Vinaigrette:
For the Hot Honey Vinaigrette:
- Fresh lime zest and juice
- Rice wine vinegar
- Hot honey
- Extra-virgin olive oil
- Salt and pepper, to taste
For the Salad:
- Diced watermelon
- Sliced English cucumbers
- Crumbled feta cheese
- Fresh basil
- Fresh mint
How to Make This Watermelon Cucumber Salad with Hot Honey Vinaigrette:
For the Hot Honey Vinaigrette:
- Whisk together the lime zest, lime juice, vinegar, and hot honey in a bowl.
- While whisking, slowly stream in the olive oil and mix until the vinaigrette is well combined.
- Season, to taste, with salt and pepper.
For the Salad:
- Combine the watermelon, cucumbers, feta, and herbs in a large serving bowl (alternatively, you can arrange this prettily on a large serving platter).
- Reserve some of the feta and herbs for garnish.
- Drizzle over the dressing, lightly toss, and serve, garnished with additional herbs and feta.
It couldn’t be easier to make!
The salad will keep in the fridge for up to two days, as long as you give it a good toss every now and then. I actually think it tastes better have it’s had time to sit in the fridge for an hour or two.

- 6 cups diced watermelon
- 2 cups sliced English cucumbers
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh basil, lightly chopped or torn
- 1/4 cup fresh mint leaves
For the Vinaigrette:
- Zest and juice of 2 limes
- 2 teaspoons rice wine vinegar
- 2 tablespoons hot honey
- 1/4 cup extra-virgin olive oil
- Salt and pepper, to taste
Instructions
For the Salad:
- Combine the watermelon, cucumbers, feta, and herbs in a large serving bowl (alternatively, you can arrange this prettily on a large serving platter).
- Reserve some of the feta and herbs for garnish.
For the Vinaigrette:
- Whisk together the lime zest, lime juice, vinegar, and hot honey in a bowl.
- While whisking, slowly stream in the olive oil and mix until the vinaigrette is well combined.
- Season, to taste, with salt and pepper.
- Adjust the acid or sweetness to your preference – this yields a very tangy, lime-forward flavor. If you want it sweeter, use less lime juice and more honey. In my opinion, dressings like this should be a “to taste” method!
To Serve:
- Drizzle the dressing over the salad and gently toss. Garnish with the reserved feta and fresh herbs.
- Serve immediately or chill and serve later. The longer it sits, the more the flavors will meld. The salad will keep in the fridge for up to two days.
