I have the girliest, EASIEST cocktail to tell you about today.
I almost didn’t share this recipe with you because I’m not sure it can even be called a recipe. It’s too dang simple.
But! Today is my sister’s birthday, and I have a feeling she would absolutely flip over these pink lemonade mimosas, so I felt compelled to tell you about them anyway. They’re cute, pretty, and bubbly – just like her (anyone who knows her would agree. She’s the cutest).
Even if they are only two ingredients. And even though my 5-year-old could make these. NOT that I’m condoning or even remotely suggesting that, haha.
SO stinking easy, but just as delicious! And because I miss my sister so (we haven’t seen each other in over three months because of quarantine), I wanted to share a cute cocktail in her honor.
All we’re doing here for these mimosas is switching out orange juice for pink lemonade. Maybe float a lemon slice and some fresh berries in the glass if you’re feeling festive. But really, that is it.
See? I told you it was really easy.
With my mimosas, I tend to like a 2-1 ratio of champagne to juice, and that’s exactly what I’m recommending here as well. Two parts bubbly to one part pink lemonade. The result is perfectly effervescent and sweet with a touch of tartness.
Dare I say, I might prefer these over traditional mimosas?
They’re a bit lighter than a regular mimosa, too, which I like. Sometimes mimosas get a little too sweet on me after the first glass, and with these, well, I could drink the whole bottle of champagne and not tire of it.
I don’t know if that’s a good or bad thing, come to think of it.

Pink Lemonade Mimosas

- Yield: Makes 4 cocktails (easily multiplied) 1x
Description
These Pink Lemonade Mimosas are the easiest, two-ingredient cocktail recipe that you never knew you needed! Light, sweet, and a touch sweet with the best pretty pink color.
Ingredients
- 1 cup store-bought pink lemonade, chilled
- 2 cups prosecco/champagne/sparkling wine, chilled
- Fresh raspberries and strawberries
- Lemon slices
Instructions
- Divide the pink lemonade between four champagne flutes.
- Top off with the prosecco and garnish with the berries and lemon slices. Serve!
Notes
The perfect mimosa for my taste is a 2:1 ratio of bubbly to juice. You can adjust this ratio to meet your tastes. If you like things less sweet, use more bubbly and less juice, and if you like things sweeter, add in an extra splash or two of juice.
