I am in the mood for a cocktail!
Especially one that is light and pretty and refreshing. That’s what I want in the spring and summer months. Nothing too sweet or heavy.
This lemon lavender gin spritz is just the thing!
I looooove gin. I have talked at length about this before, but if there is a gin drink on a menu, I almost always order it (or a marg). Especially now that gins have moved away from tasting like pine needles. Gin is more often floral and light! It is so good in so many drinks.
This lemon lavender concoction is no different.
It starts with a lavender-infused simple syrup. I like to buy my dried lavender online, ensuring that it is culinary grade. It keeps for FOREVER in a sealed mason jar in my pantry. It smells lovely and tastes so great in cocktails like this. LOVE it.
Once the simple syrup has infused and cooled down, we strain out the lavender. It’s done its job. And no one wants to be chewing on dried lavender while they’re sipping a drink!
All that’s left to do is mix things up. To keep things super simple, I’m using store-bought lemonade for this cocktail. If you want to make your own – go for it! Kudos to you! I don’t have the desire or time to juice that many lemon at once, so I take the easy route.
Into the mix goes the lavender syrup, gin of choice (I prefer something floral and light like Hendrick’s or Empress), and the lemonade. Shake it all up until mixed and chilled and then pour into glasses filled with ice.
So, as you can see, there is something a little extra special about this cocktail! That beautiful purple-blue float of color!
While this is 100% OPTIONAL, I like to float a little blue butterfly pea mixture over top of the mixed drink. Not only is it beautiful, but it also adds a note of fun and whimsy! And we could all use some more of those things in our lives these days, don’t ya think?
Butterfly pea pollen is a tasteless superfood that you can add to a variety of things for some fun color. I buy mine online and it makes for such a fun twist on cocktails like this one.
It turns from blue to purple when mixed with something acidic (the lemonade, in this case), but it does not make your drink taste weird or funky or anything! It’s just for drama and fun!
It takes this from looking like a regular ol’ spiked lemonade to something more interesting – and the color reminds me that there is lavender in this drink. So fun!
Again, a completely optional addition – but I hope you try it out!
If gin is not your thing (it can be very polarizing), feel free to drink this with any light liquor of your choice: vodka, rum, or tequila would all be fab. OR drink it virgin! It’s absolutely delicious without the booze.
Me? I’ll take a double of gin, please. This is SO up my alley.

Description
This Lemon Lavender Gin Spritz is a refreshing and fun cocktail filled with whimsy! Gin, lavender, and lemonade are the base of this drink – light and delicious. A float of butterfly pea pollen over top gives this a dramatic and festive flair!Â
Ingredients
For the Lavender Syrup:
- 1 cup water
- ¾ cup sugar
- 2 tablespoons dried culinary lavender (I buy mine online)
For the Butterfly Pea Pollen Float (OPTIONAL):
- 1 teaspoon butterfly pea pollen powder (I buy mine online)
- 4 oz cold water
For the Cocktails:
- Ice
- 4 oz gin
- 2 oz lavender syrup
- 6 oz lemonade

Sparkling water, for topping off the glasses

Butterfly pea pollen mixture, optional
- Lemon slices, for optional garnish
- Lavender sprigs, for optional garnish
Instructions
For the Lavender Syrup:
- Combine the sugar and water in a small saucepan and set over medium heat. Bring to a boil, and then reduce the heat to a simmer, and cook for 5 minutes or until the sugar is completely dissolved.
- Stir in the dried lavender and remove the pan from the heat. Allow the syrup to cool to room temperature (the lavender will steep in the hot syrup as it cools).
- Strain out the lavender and store cooled syrup in the fridge.
For the Butterfly Pea Pollen Float (OPTIONAL):
Combine the pollen powder and the water in a small measuring cup. Stir until the powder is completely dissolved.
For the Cocktails:
- Fill two glasses with ice.
- To a shaker filled with ice, add the gin, lavender syrup, and lemonade.
- Shake vigorously to combine and chill all the ingredients. Strain into the glasses filled with ice. Top with a splash or two of sparkling water.
- If using the butterfly pea pollen, slowly pour a few teaspoons of the mixture over the top of the glasses for a dramatic and beautiful effect. This part is totally optional.
- Garnish with lemon slices and lavender sprigs and serve immediately.
Notes
- The butterfly pea pollen powder is for visual effect only and is completely optional – it doesn’t add flavor to the drink. Just adds beautiful color and a twist of whimsy!
- If gin is not your favorite, this would be great with any light liquor: vodka, light rum, or tequila. It also works great as a virgin drink!

Wondering if when you refer to lemonade you mean lemon juice? Or a mixture of lemon juice and sugar/syrup?

No, I mean lemonade! I use store bought, but you can certainly make your own, if you prefer.
