I have the most amazing summer appetizer to tell you about! Just in time for the upcoming weekend.
These Crispy Halloumi & Peach Toasts are heaven on a plate. Incredibly simple to put together but impressive, delicious, and beautiful – exactly what I look for in a summer appetizer.
We have a major love affair going on in this household with halloumi cheese. If you haven’t tried it yet, please do! I find that it is more readily available in the summer months (Costco sells it in large batches), and whenever I see it in the stores, I grab a bunch. It has a long shelf life and can be used in so many different ways.
It’s best if you can crisp it up in a pan. It holds its shape and seared almost like a piece of meat would. When crispy, it has this insane texture – crisp and caramelized on the outside and gooey and chewy on the inside. It has a cheese curd kind of texture – chewy with some squeak!
It’s addicting. And we eat it all summer long!
Because halloumi is a salty, firm cheese, I particularly love it with sweet fruit. In this case, juicy summer peaches! I love to serve the halloumi and peaches on some grilled sourdough bread and drizzled with hot honey and chopped pistachios. It is SO simple but has such incredible flavor and varying textures going on. We’re obsessed.
Ingredients You Need for These Crispy Halloumi & Peach Toasts:
- Olive or avocado oil
- Halloumi cheese
- Fresh peaches
- Hot honey (this is my favorite)
- Pistachios
- Flaky sea salt
- Sourdough bread
How to Make These Crispy Halloumi & Peach Toasts:
For the Halloumi:
- Heat a large nonstick skillet over medium-high heat and add the oil. Slice the cheese into 1/2-inch pieces and pat them dry.
- Add the cheese slices to the hot pan and cook for 2-3 minutes per side or until golden and crisp.
- Remove the cheese from the pan and set on paper towels to drain off any excess grease.
To Assemble:
- I love these toasts with grilled bread, but you can toast them however you prefer. To grill the bread, drizzle slices of sourdough bread with a little oil and season with salt. Add to a hot grill and grill for a few minutes per side, until toasty and charred in spots.
- Top each piece of grilled sourdough with a slice of the crispy halloumi, a few slices of peach, a drizzle of hot honey, a sprinkle of sea salt, and some chopped pistachios. Serve while the bread and cheese are still warm!

- 1 tablespoon olive or avocado oil
- 8 oz halloumi cheese, cut into 1/2-inch thick slices
- 2 ripe peaches, pitted and thinly sliced
- 2 tablespoons hot honey (this is my favorite)
- 3 tablespoons chopped pistachios
- Flaky sea salt
- Grilled sourdough bread (roughly 8 pieces)
Instructions
For the Halloumi:
- Heat a large nonstick skillet over medium-high heat and add the oil. Pat the cheese slices dry and then add them, in batches, to the oil. Cook for 2-3 minutes per side or until golden and crispy.
- Remove the cheese from the pan and set on paper towels to drain off any excess grease.
- Continue until all the cheese slices have been crisped.
To Assemble:
- I like to grill my bread, but you can toast in an oven instead. Whatever you prefer. I drizzle my sourdough slices with oil and sprinkle with salt and then add to a hot grill for a few minutes per side, until toasty and charred in spots.
- Top each piece of grilled sourdough with a slice of the crispy cheese, a few slices of peach, a drizzle of hot honey, a sprinkle of sea salt, and some chopped pistachios. Serve while the bread and cheese are still warm.
