Roasted Sweet Potato Rounds with Honey & Feta

I love a roasty toasty sweet potato!

I do prefer my sweet potatoes to be on the savory side – they’re sweet enough their own already. Which meeeeans I don’t care for the classic sweet potato casserole.

I know. I probably just enraged a bunch of you. But! I have my reasons.

Aside from it being sickeningly oversweet to me, the casserole is not something I grew up eating. It has no nostalgia hold over me, which is one reason I suspect people love said casserole so much.

If you’re like me and have no affinity for sweet potato casserole come Thanksgiving, I’ve got your sweet potato needs covered with these Roasted Sweet Potato Rounds with Honey & Feta!

I’m telling you, these are GOOD.

Like I said, I love a savory sweet potato. These are just that, while still allowing the natural sweetness of the potatoes to do its thing.

These sweet potato rounds are roasted in olive oil and an array of spices, along with a bit of honey. I love the hot honey here for some kick and extra flavor, but regular honey will certainly do.

Another bonus: these are easy to make! You just have to make sure you have oven space and a little time to get them cooked just right.

The roasting of the potatoes using this method gets them super crispy and caramelized on the outsides while the inside stays soft and fluffy. They are texturally pretty addicting.

And the spices with hot honey really send them over the edge in terms of flavor.

I love to garnish these with crumbled feta cheese (ya know, for more of that salty-savory goodness), and fresh herbs. Another drizzle of honey never hurt things, either.

I could seriously eat this whole platter by myself. They are so addicting!

Ingredients for These Roasted Sweet Potato Rounds with Honey & Feta:

  • Sweet potatoes
  • Olive oil
  • Spices mix: cinnamon, smoked paprika, cumin, coriander, red pepper flakes, kosher salt, and black pepper
  • Regular or hot honey (spicy is delicious!)
  • Crumbled feta cheese
  • Fresh chives or parsley

How to Make These Roasted Sweet Potato Rounds with Honey & Feta:

  • Preheat the oven to 425°F.
  • Wash the sweet potatoes well and pat dry. Slice the potatoes into ⅓-inch thick round slices.
  • Drizzle the oil on a large rimmed sheet tray. Add the sweet potatoes and turn them to evenly coat in the oil. You may need to use two sheet trays for this, depending on how large your potatoes are to start. You don’t want the potato rounds to be touching on the tray – give them plenty of room to roast.
  • Sprinkle over the spices and salt and then drizzle over the honey. Turn the potatoes again to evenly coat in the seasonings.
  • Bake in the oven for 20 minutes. Flip the potatoes over and then place back in the oven for another 20-25 minutes, or until the potatoes are golden and crispy around the edges.
  • Carefully transfer the potatoes to a serving platter and season with a little more salt.
  • Drizzle over a little more honey and then crumble the feta cheese over top. Finish with fresh chives or parsley, and then serve while warm.

Ingredients

    Made these tonight and they were amazing! I didn’t use the honey and feta but the spices combo was fantastic. Even my 8 year old son love them and he’s super picky. Thank you!

    Absolutely delicious! I added the Feta once it was on our plates because not everyone in my family likes feta. I used the hot honey and it was fantastic.
