These Cookies & Cream Rice Krispie Treats are an easy, no-bake treat bursting with gooey cookies and cream flavor. Sweet, chewy cereal treats mixed with Oreo cookies – the perfect combo!
I have the easiest no-bake treat for you today.
We’re talking Cookies & Cream Rice Krispie Treats! Yes!
These are so much fun, taste incredible, and have the best chewy-gooey factor. Given how easy they are, they would make for the perfect addition to any party spread (like the Super Bowl parties happening this weekend!).
I have always loved cereal treats like this, but admittedly, they aren’t the first thing that comes to mind when I want to make a dessert.
They are a forgotten dark horse in my kitchen. Every time I DO think to make them, I’m instantly reminded of childhood and feel irritated with myself for not thinking to make them more.
These rice krispie treats have Oreo cookies throughout, as well as a white chocolate-Oreo topping. To add a salty-sweet bite, I love to sprinkle over a little bit of flaky sea salt as well. Swoon.
They are absolutely delicious. Kids love them. Adults too. My husband stood over the sink and straight-up HOUSED these without shame. Hah.
Ingredients You Need for These Cookies & Cream Rice Krispie Treats:
- Unsalted butter
- Mini marshmallows
- Vanilla extract
- Salt
- Rice Krispies cereal (or other puffed rice cereal variety)
- Oreo cookies
- White chocolate chips
- Coconut or avocado oil
- Flaky sea salt (optional but recommended!)
How to Make These Cookies & Cream Rice Krispie Treats:
For the Rice Krispie Treats:
- IMPORTANT: These come together quickly, so it is best to have all the components prepped and ready to go before you begin.
- Grease a 9 x 13-inch baking dish liberally with cooking spray (alternatively, for thicker treats, you can use an 8 x 8-inch or 9 x 9-inch pan). Line the pan with parchment paper and liberally spray the paper as well.
- Place a large pot over medium heat and add the butter.
- Once the butter is melted, add the first bag of mini marshmallows. Stir until the marshmallows are completely melted and then mix in the vanilla and salt.
- Remove the pan from the heat and then stir in the cereal and chopped Oreos, mixing quickly while everything is still warm. Stir in the remaining mini marshmallows.
- Press the mixture evenly into the prepared baking pan. I find that using damp hands is the easiest way to do this.
For the Topping:
- Combine the white chocolate chips and drizzle of oil in a microwave-safe bowl. Microwave for 20 seconds, stir well, and then repeat until the chocolate is completely melted and glossy.
- Drizzle the melted chocolate all over the top of the treats and then sprinkle with the chopped Oreos while the chocolate is still warm.
- Sprinkle over a little flaky sea salt, if desired. It’s totally optional but SO good if you enjoy the salty-sweet combo.
- Allow the cereal treats to set for 1 hour. Remove from the pan and cut into squares.
FAQs:
What size pan should I use?
To achieve thicker treats as seen in the pictures, use an 8 x 8-inch or 9 x 9-inch pan. The smaller baking pan will yield thicker, denser and gooey-er treats. It will seem like the mixture won’t all fit in the smaller pan, but if you press it in very compactly and firmly, it will all fit. Growing up, we always made these in a smaller pan so I prefer them thick.
A 9 x 13-inch pan will yield treats with a more traditional thickness. They’ll be just as delicious, just thinner!
I don’t like Oreos. Can I use something else?
Absolutely! Cereal treats like this have endless possibilities. Chop up your favorite store-bought cookie (any variety!) and add them in. You can customize these 100 different ways with different flavors and add-ins.
How far in advance can I make these?
Rice krispie treats of any kind are best enjoyed the day they are made, but these will keep for a day or two if wrapped very well with plastic wrap. They will lose some of their softness as they sit.
