These Spicy Pineapple Palomas are what hot days call for. They are incredibly refreshing, easy to make, and so, so darn good.
While I love a traditional paloma with more of a grapefruit focus, I thought it would be fun (and yummy) to try infusing a little more flavor into the standard paloma.
In addition to the tequila and traditional fresh grapefruit and lime juices, I also add in sweet pineapple juice and spicy simple syrup infused with serrano peppers. The result? Incredible!
It’s tangy, citrusy, and super refreshing with just a hint of heat. Perfection on a hot day.
The recipe below includes enough syrup to make a bunch of these, but if you’re doing that, I recommend batching all your citrus juices ahead of time so you aren’t squeezing grapefruit and limes on the fly!
Trust me, you’re going to want more than one of these babies.
Ingredients You Need to Make These Spicy Pineapple Palomas:
For the Spicy Serrano Syrup:
- Water
- Granulated sugar
- Serrano peppers
For the Paloma:
- Ice
- Salt, for rimming the glass
- Silver tequila
- Pineapple juice
- Freshly squeezed grapefruit juice
- Freshly squeezed lime juice
- The spicy serrano syrup
How to Make These Spicy Pineapple Palomas:
For the Spicy Serrano Syrup:
- Combine the water and sugar in a small saucepan and set over medium heat. Add in the serrano peppers
- Bring the mixture to a simmer, stirring frequently, and cook until the sugar is completely dissolved, about 2-3 minutes.
- Remove from the heat and allow the peppers to steep in the syrup for at least 10 minutes (longer is better). Strain out the peppers and discard.
- This can be made ahead, cooled to room temperature, and stored in an airtight container in the fridge for up to one week. This will make enough syrup for several cocktails.
For One Cocktail:
- Rim your serving glass with salt and fill with ice.
- To a shaker filled with ice, add the tequila, pineapple/grapefruit/lime juices, and serrano simple syrup. Shake vigorously for 30 seconds to thoroughly mix and chill the ingredients.
- Pour the mixture into the prepared glass and garnish with slices of grapefruit or lime or a pineapple wedge. Serve immediately.
