Mango Piña Coladas

Cheers to the start of August, friends!

I have the most appropriate drink to kick off a new summer month: mango piña coladas!

So fresh and fruity and summery. Ideal for sipping poolside on a hot day. Really, perfect for sipping anywhere on a hot day.

I loooove a piña colada. They scream “VACATION!” to me, and whenever we’ve traveled somewhere tropical, I almost always order one. Just for fun. Just to say I did. Most times, I’m pleasantly reminded why I love them so.

That said, I can usually only have one. They’re too sweet for more than that. UNTIL NOW!

These mango piña coladas are still loaded with the creamy sweetness of a traditional colada but with a little tangy-tart twist: mango! The mango totally lightens these up, if that makes sense. It’s bright flavor sort of makes everything else pop. And because I find cream of coconut to be sweet enough, I don’t add any additional sweetener here.

It’s just frozen fruit, cream of coconut, rum, and a splash of pineapple juice. Easy peasy.

The result is still deliciously creamy and tropical but without the over-the-top, send-me-into-a-sugar-coma sweetness. It’s perfect!

I actually love blender drinks like this for entertaining. You can make a big batch to serve a larger group of people in one easy step. Everyone gets a festive and frosty drink to enjoy.

Description

Mango adds a fun twist to these frozen piña coladas! They come together quickly and easily – all you need is a blender!


Ingredients

Scale
  • 2 cups frozen pineapple chunks
  • 2 cups frozen mango chunks
  • 8 oz white rum
  • 4 oz pineapple juice
  • 1 (15-oz) can cream of coconut (See NOTE)
  • Ice

Garnishes:

  • Fresh pineapple or mango slices
  • Maraschino cherries
  • Paper umbrellas

Instructions

  1. Place the frozen fruit, rum, pineapple juice, and cream of coconut in a blender and blend on high. Add handfuls of ice while the machine is running until the mixture reaches a slushy, thickened consistency.
  2. Pour the mixture into serving glasses and garnish as desired. Serve immediately!

Notes

  • You can make this nonalcoholic by subbing all pineapple juice for the rum.
  • Cream of coconut will lend a very sweet and strong coconut flavor to these drinks. If you cannot find it, sub with a can of regular coconut milk. Just know that the coconut flavor may be slightly less potent. The drink will also be less sweet – add an extra splash of pineapple juice or a drizzle of agave nectar, honey, or simple syrup (to taste!).

    Looks great! I would like to sub dark for white rum like a painkiller, what do you rhink?

      I think that would work fine! The flavor will definitely be a little different, but not in a bad way!
