A delicious, gingery, tequila-y bang. You down? Good. Let’s do this.
I feel like celebrating. We’re into September (one of my fave months of the year), school is in full swing, and we’re almost to the weekend. All worth a celebration!
I have a lifelong obsession with anything ginger flavored. I am one of those people who LOVES ginger ale even when I’m not sick. It’s actually my favorite soda. I live for the spicy sweetness.
Like most people, it also tastes like nostalgia to me. And not just home-sick-from-school nostalgia. It just reminds me of being a kid!
And margaritas? Well, we already know that I am so into those. The proof is in the pudding.
So a Ginger Beer Margarita seemed like the most natural recipe for me to create, and to no one’s surprise, I freaking loved these!
These are great for fellow ginger lovers because we have the spicy goodness happening in two ways: firstly, a homemade ginger simple syrup, and secondly, we’re topping these babies off with ginger beer! The bubbly effervescence is everything. It really drives home that ginger goodness.
These margs are quick and fairly easy to pull together, and when we’re in need of a celebratory cocktail, both of those things are a must. Whenever possible, I try to make infused simple syrups ahead of time so they have the most flavor bang for their buck, but if you’re short on time, this will still work. You just have to let the simple syrup cool a bit before using so it doesn’t melt all the ice in your drink AND so the ginger has adequate time to steep in the warm syrup.
Waiting is the hardest part of this recipe, I promise.
Ingredients You Need to Make These Ginger Beer Margaritas:
- Sugar
- Water
- Fresh ginger
- Limes
- Triple sec or other orange liqueur
- Silver tequila
- Ginger beer
- Salt or sugar, for rimming glasses
How to Make These Ginger Beer Margaritas:
For the Ginger Syrup:
- Combine the sugar and water in a small saucepan and set over medium heat.
- Bring to a boil and then simmer for a few minutes until the sugar is completely dissolved.
- Add in the fresh ginger and remove the pan from the heat. Allow the ginger to steep in the syrup until it has cooled to room temperature. Once it has cooled completely, you can strain out the fresh ginger and discard.
- Store in an airtight container in the fridge until you are ready to use.
For the Margaritas:
- Run a lime wedge around two glasses and then dip the rims in salt, sugar, or a combination of the two (definitely a preference thing). Fill the glasses with ice.
- To a shaker filled with ice, add the lime juice, triple sec, tequila, and ginger syrup. Close the shaker and then shake vigorously for 30 seconds or so to ensure all the ingredients are thoroughly mixed and chilled.
- Strain the mixture into the two glasses, and top each glass off with a few ounces of ginger beer. Garnish with additional lime wedges or slices of fresh ginger and serve.

Ingredients
For the Ginger Syrup:
