This One-Pan Cheesy Broccoli Gnocchi Bake is an easy, relatively quick meal that serves up major comforting vibes.
You guys know I LOVE a one-pan meal, and this one is absolutely delicious. Fewer pots and pans to deal with after enjoying a bowl of cozy gnocchi? Sign me up.
This baked gnocchi features the classic flavor combination of broccoli and cheddar. Like everyone else, I adore this combo when it comes to soup (if I’m at Panera, I HAVE to order it). I wanted to take those same classic flavors and transform them into a pasta dish.
Enter shelf-stable gnocchi. It has become a pantry staple in my house. We all love it, it cooks up quickly and easily, and like most other pastas, it’s incredibly versatile.
To make this gnocchi, we start with a large oven-proof skillet or braising pan on the stovetop. Saute some onions and garlic, add in some cream cheese and broth, and then the cheese, gnocchi, and broccoli.
Pop the whole pan in the oven for 15-20 minutes or until the cheese is melted and everything is bubbly and gooey.

Ingredients You Need for This One-Pan Cheesy Broccoli Gnocchi Bake:
- Olive oil
- Onion
- Garlic
- Red pepper flakes (optional – skip if you are spice-averse)
- Vegetable broth (if not keeping vegetarian, chicken broth also will work)
- Cream cheese
- Broccoli florets
- Shelf-stable gnocchi (found in the pasta aisle)
- Sharp cheddar cheese
- Mozzarella cheese
- Parmesan cheese
- Salt and pepper
How to Make This One-Pan Cheesy Broccoli Gnocchi Bake:
- Preheat the oven to 425°F.
- Place a large ovenproof skillet or braising pan over medium heat and add the olive oil. Add the onions and a pinch of salt and cook, stirring frequently, for about 5 minutes.
- Add in the garlic, red pepper flakes, and another pinch of salt and stir to combine. Cook for a couple minutes more.
- Stir in the cream cheese and heat through until it is mostly melted and creamy. Stream in the broth, whisking well to combine. Season, to taste, with salt and pepper (keeping in mind that the cheese will add salt). Don’t be alarmed if the cream cheese seems clumpy or separates a bit – it will all melt together in the oven.
- Bring the broth to a simmer and then add in the broccoli and gnocchi. Stir to combine.
- Top with the grated cheeses and then transfer the pan to the oven and cook for 20 minutes, or until the top is bubbly and golden in spots.
